To start, it’s a refreshing elixir made from apple cider vinegar, ginger, and cut with a light sweetener, traditionally molasses. While that combination might not sound entirely appealing in print, the actual drink is a refreshing balance of tart and sweet, with the subtle funkiness of apple cider vinegar- not unlike the fermented notes of kombucha. Today, there are a variety of companies bringing this historical drink back to life, and it is becoming increasingly available in bottled form.
Although it’s precise history is somewhat unclear, the general consensus is that it became a popular beverage sometime in the 18th century in New England. At that time, it was a thirst quenching beverage drunk by farmers spending long hot days in the hay fields, over time lending it the nickname “haymaker’s punch”. While out in the fields, the concoction provided hydration and cooling, and the combination of ginger and apple cider vinegar likely aided in immune health and gave a good energy boost, according to Almanac
